Magic Cookie Bars

I am not a fancy person. When I'm not squatting in my childhood bedroom, I surround myself with found objects and re-purposed second-hand furniture. I hate wearing suits, let alone cocktail dresses (I do love my shoes and purses, though). I am a fan of my Corolla and will drive it until it's dead. I like dive bars and seek out cheap eats. You will often find me giggling at the expense of restaurants with white tablecloths and over-attentive waiters. I prefer my pretension facetious and silly. So, while I enjoy unique, interesting and delicious food, I am more comfortable with edible simplicity.

Magic Cookie Bars are the antithesis of pretentious and complicated. In fact, they're so unpretentious that you can find the recipe on the Eagle Brand sweetened condensed milk can. I don't normally follow recipes on boxes (except for Toll House cookies, but there's a very specific way they need to be prepared), but I'm really glad my mom decided to do so a few years ago. Not only do these bars only take 40 minutes maximum from preparation to finish, they contain only six ingredients, all of which are staples for the home baker. This, of course, is why they have become our go-to dessert for potlucks and other events. Plus they always receive rave reviews. Seriously, who wouldn't enjoy a chunk of chocolate, walnuts, coconut and sweetened condensed milk? Just be sure to cut them into smaller squares--they're quite rich.

Oh, and for those of you who have no self-control, after you cut them up, freeze them. One little square will satisfy any craving. And while I never wait for them to defrost, be careful and try not to break your teeth.

Magic Cookie Bars
Makes 2-3 Dozen

1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) butter
1 14 oz can sweetened condensed milk
2 cups chocolate chips
1 1/2 cup sweetened coconut
1 cup chopped walnuts

Preheat oven to 350F (325F if using glass pan).

1. Cut up butter into smaller chunks and place in a 13x9-inch baking dish. Put into hot oven so the better melts.

2. When butter is melted, make sure it is evenly distributed. A little bit at a time, sprinkle crumbs over butter. The easiest way is to do a few thin layers.

3. Spray the bottom of a glass or measuring cup with nonstick spray. Use it to tightly pack crumbs down.

4. Pour sweetened condensed milk over crumbs evenly. Use spatula to help.

5. Evenly spread chocolate chips over milk. Pack down with bottom of glass or cup. Repeat with coconut and then nuts, packing down between lawyers and after nuts.

6. Bake for 25 minutes or until lightly browned. Let cool before cutting.

Store in fridge, or cut into pieces and freeze between parchment paper.

Yes. These are pretty damn magical. I don't think anyone could turn their nose at these babies...and if they did...well we might just have to question our friendship. These sound just divine, and I'm wishing I had a can of condensed milk in my pantry right now. Thanks for sharing!

I love, love, love sweetened condensed milk but those dairy free babies and hubby of mine mean I will eat the whole pan. Not cool. I suppose I could make cajeta which is sweetened condensed milk made with goat milk. Oh, a little tip, sometimes I'll put s.c. milk in my tea. Try it, delicious and rich, you'll love it and kind of hate me.

Magic cookie bars are some of my favourites ever! One of the first things I learned to bake as a kid, besides chocolate chip cookies. My dad always called them Hello Dolly's. I have NO idea why!

I have a 2001 Corolla that I've been driving since high school and also plan on driving it until it's more expensive for replacement parts and repair work than a new car. I love your simple attitude as well and these magic cookie bars! I've tried this recipe (or something like it) before and was not let down. Hooray for reliability! :)

Whoa, that is a nice looking bar. And especially so being that it came from the side of a box! I suppose the big companies probably do test those recipes at least a couple of times though, so maybe it makes sense that it's a nice recipe?!
p.s. The date balls taste a lot like cocoa, the nut isn't noticeable, and there is not overly sweet date taste. Maybe the bitterness of the cocoa does away with that?! Oh, and I used Green & Black's cocoa, which puts most others to shame (smile).

Are these the same as the Hello Dolly's on the side of the eagle brand condensed Milk? They certainly remind me of those. My sister always makes them around the holidays so rich and fabulous. I am sure yours are just as good, if not better!
